Recipe: Dandelion honey
Hi everyone, I’m happy with the result of my first time making dandelion honey and it tastes amazing! I would like to share this recipe with you.
Ingredients
• 50 flowers*.
• 500 ml water
• 4 slices of lemon (peeled to avoid bitter taste)
• 500 grams of sugar (I used cane sugar)
*Please leave some flowers for the bees and try to collect as little as possible from different plants and not just one. Let’s show gratitude and love for the beautiful dandelions.
**Some people use only the petals because the green part can be a bit bitter.
Preparation

Pick the flowers and give them a good rinse to clean them.

Boil the water with the flowers and lemon.

When it is boiling, lower the heat and let them simmer for 30 minutes.

Strain the liquid and boil it again, adding the sugar. Boil it slowly so that the sugar dissolves and thickens to the desired consistency for one hour.

Put it in jars, let it cool and then you can store it in the fridge for up to six months (label your honey with the date so you don’t forget when you made it).

Dandelion honey offers numerous health benefits, including antioxidant properties and possible anti-inflammatory effects. It is also rich in vitamins and minerals, such as vitamin C and potassium.
Result
That was my experiment and yes, I was able to fill a 500g jar (small) I didn’t want to make more in case it was a failure. From this you can double or triple the quantities if you want to make more or less. Just one thing, the amount of sugar should be equal to the amount of water and that’s it.
